The Flor of Evangelho
The foundation of Soleras del Pacífico, "The Flor of Evangelho" is a single vineyard, fino-style solera established in 2017.
Palomino grapes from the ancient vines of Evangelho Vineyard are pressed and undergo native barrel fermentation. In spring, the wine is lightly fortified to favor healthy flor development and is then blended into the solera where it matures under a veil of flor yeast. In order to make room for the new vintage, wine is fractionally blended down the 3 levels of the solera and a bit of wine is removed from the bottom level. This wine is bottled unfiltered and released once a year.
